Borrago Newsletter #16: Breakfast muffins and spicy Chai
After the excesses of Christmas, we often feel like a bit of a health kick. So as we get ready to go into dry January, we thought we would hero Chai. Delicious and healthy in drinks, it is also the spice and flavour in our healthy Chai breakfast muffins, which have one particularly hard to guess ingredient: Weetabix! We hope you have had a wonderful festive break and wish you a very Happy New Year and best of luck to those doing a dry January.

Spiced Chai

Chai Spiced Breakfast Muffins
January is a busy month and after having a break over the Christmas holidays it's easy to find yourself out of routine. Our Chai Spiced Breakfast Muffins are the perfect on-the-go healthy breakfast, for those "I'm running late" mornings.
Ingredients
1.5 cups of flour
2 teaspoons of baking powder
1 cup of milk
The spices from 4 teabags of spiced chai tea
3 dessertspoons of honey
3 tablespoons of rapeseed oil
1 teaspoon of baking soda
2 weetabix - crushed into crumbs
1 apple - grated
Method
Pour the milk into a small saucepan, add the spices from the teabags and heat gently until steaming hot and the spices are well infused. Mix in the honey and stir until melted.
Sift the flour and baking powder together in a large bowl and make a well in the centre. Pour the oil and baking soda into the milk and spices and mix together then pour immediately into the flour.
Add the apple and Weetabix and mix until just combined, being careful not to overmix or the muffins will become rubbery.
Bake at 180 for 15 minutes or until just cooked through. Depending on your oven, they may need 2-3 more minutes.
