Borrago Newsletter #19: Sunshine and hope

We are certainly living in interesting times. The sunshine has been most welcome and I hope
you are happy, safe and well. The idea of seasonal or difficult ingredients is a bit ridiculous, so we have a recipe which you can make with very little and our hero serve, hoping you have some tonic at home. 

On a more positive note, our borage seeds we planted last month are really starting to take off and we have quite a few plants from last year which already have flowers on. I hope the sun shines on us all and that times get easier for all very soon.

The boys breakfast pancakes: Serves 4

My little boys can’t have dairy or egg, so this is a very simple and easy to make pancake recipe. It is very popular at home and a bit of a Saturday morning tradition. So if you are short of milk or eggs, this is a great option. I make little ones, so you can have lots, which feels a bit more like fun.

 

Ingredients: 
1 cup flour
2 teaspoons baking powder
1 cup water
2 tablespoons oil
2 tablespoons syrup
1 teaspoon vanilla essence


Method:
Mix the baking powder into the flour, add the water and beat until all the lumps have gone.
Add the rest of the ingredients and beat well.
Heat a frying pan and lightly oil. Spoon in a tablespoon of the mixture and repeat around the pan. Let the m bubble up and solidify, flip when they are golden brown on the bottom and serve with syrup or lemon and sugar.
